Chickpea 'tofu'

A fabulous, vegetarian addition to your favourite meal - pictured here in a Green Curry.

Instructions

1 cup chickpea (besan) flour

1/4tsp garlic powder

1/4tsp cumin

1/4tsp tumeric

1/2tsp salt

1 3/4 cups water (more if needed)

  1. Line a bread pan with greaseproof paper. (I used a 'banana bread' loaf tin)

    Add all ingredients to a blender and mix until combined with no lumps.

    Pour mixture into a non-stick pot or saucepan. 

    Cook over a low-medium heat, stirring continuously.

    The mixture will get lumpy, and then thicken evenly. This will only take a few minutes.

    Continue cooking and stirring for a further few minutes - have a little taste test and adjust your flavours if need be.

    Pour mixture into your prepared pan and leave on the bench to cool before putting into the fridge for at least one hour.

    Once fully set, remove from pan and cut into cubes, or crumble into your favourite recipe.
