Delicious vegan goodness!

Ingredients

  • 3 tins Young jackfruit
  • 1 lrg Red onion Thinly sliced
  • 1 tbsp Minced ginger
  • 1.5 cup Red cabbage Thinly sliced
  • Olive oil
  • Coconut oil
  • Sesame oil
  • Smoked paprika
  • Sea salt
  • 1 tbsp Apple cider vinegar

Instructions

  1. Preheat oven to 170deg celcius, and line a baking tray with non-stick paper

  2. Add to your frying pan - olive oil; jackfruit; red onion; sliced cabbage; ginger; and sautee for 10mins. Use your wooden spoon to pry the pieces apart!

  3. Once lightly browned - add seasonings and vinegar. Sautee for another 10mins.

  4. When your onion and cabbage are soft and brown, stir in the remaining oils - about a tbsp of each (I am not great at measuring!)

  5. Transfer to oven tray, spread out roughly and cook for 10mins.

  6. Check every 10mins and stir the jackfruit. It should go brown on the edges - so rotate the outside to the inside and bake again. Do this 3 times - or more if you like!

  7. Once cooked, there are endless possibilities. I keep in the fridge and add to salads or breakfast burritos. You could have on baked potatoes; with gnocchi; in pasta; in a sandwich; in fried rice; on a spoon; in your fingers... it's really up to you! Enjoy!

  8. PS. This is perfect if you're having a vegan/vegetarian friend over for dinner and have no idea what to make! So versatile!
