Sticky date cookies

These easy, melt-in-your-mouth cookies will make any afternoon tea a little more delicious!

Ingredients

  • 125 g butter (I use a vegan butter), softened
  • 1/2 cup sugar (any you desire)
  • 1 tsp vanilla essence
  • 1 egg
  • 1.25 cups SR flour (I choose gluten free)
  • Plain flour (Again, GF for me) to dust
  • .5 cup sticky dates, chopped

Instructions

  1. Preheat oven to 180deg and line a couple of baking trays with baking paper.

  2. Using an electric beater, beat the butter and sugar until light and creamy.

    Add the egg and vanilla. Re-beat.

  3. Stir in the flour until combined.

  4. Stir in the dates.

  5. Using lightly floured hands, roll small balls (1-2tsp) and place on your tray.

    Bake for 15mins - and not much longer! Set aside to cool and taste test as soon as you can!
