Quinoa Pizza Base

Possibly the best discovery I've made in a very long time. It can certainly be challenging living in a 'food bubble' as I call it - especially when it comes to enjoying things like PIZZA! 

Well, not any more my friends... not anymore!

Thanks to Simply Quinoa for the inspo - all I added to the base were some herbs. I have been searching for a pizza base recipe for soooo long, and this is the current winner!

Ingredients

1.5 cupa quiona - soak overnight in water

1/2 cup water

1 tsp baking powder

1 tsp salt

1 tsp dried italian herbs

4 tbsp Olive oil

Any toppings you desire!

Instructions

  1. Tip one - use your tastebuds.

    Soak your quinoa over night with a generous amount of water.

    Preheat oven to 200deg celcius. Line a baking tray (I used two to make a thinner crust) with non stick baking paper and use some of your olive oil to grease the paper.

    Rinse your quinoa well & then add all ingredients to a blender.

    Blend on high for a few minutes, until thick and creamy.

    Pour batter onto your baking paper and spread evenly - it will not be like your traditional 'pizza dough' - it will seem runny like a thick batter.

    Bake for 15mins, remove from oven, flip and bake for another 10mins.

    You want crispy edges.

    Now for the fun part - your toppings! Get creative, let your tastebuds lead the way.

    Last night I went for a simple garlic and herb butter with some goats cheese. I cannot even describe how amazing it was!!
