Quinoa & roasted vegetable salad

The perfect salad for any occasion! I often take along to BBQ's or group functions - it's wonderfully filling for those who don't eat meat; and a great accompaniment for those who do! Everyone body wins, especially your insides. 

Ingredients

2 cups cooked quinoa

2 tbsp olive oil

Cracked pepper & sea salt

2 tsp Cumin

Roasted pumpkin cubes

Roasted beetroot (baby beets look amazing and taste wonderful!)

Zucchini - sliced as thin as you can (or grated)

Cherry tomatoes - get the good ones - thank me later

Green stuff - spinach; rocket; both

1-2 pieces of fruit - pomegranate; mandarin; mango

Goats fetta

Juice of a lime

Small handful of pinenuts

Fresh herbs - coriander and parsley

Instructions

  1. Once your quinoa is cooked, stir in all other ingredients except the goats cheese. Taste and adjust as you prefer.

    Sprinkle goats cheese over the top! 

    Simple and delicious.
