Veggie Taco's

It's time to taco 'bout something serious. Everyone loves this summer perfect - easy meal right?!

*You could almost halve this recipe for one dinner - I always like leftovers!


Sesame oil

Knob of ginger

2 large garlic cloves

1 onion

12 yellow squash

1 packet dried Italian soup mix - basically lentils and beans

1 celery stick

Tin of crushed tomatoes

1tsp coriander seeds

2tsp hot curry paste

1/2 cup physillium husk

Taco toppings - lettuce, cheese, chopped tomato, avocado, grated carrot, fresh herbs, follow your heart!

2tbsp stock powder



  1. Heat sesame oil in a deep pan or pot. Add crushed garlic, finely chopped ginger, finely chopped celery and finely chopped onion. Cook for a few minutes - and enjoy that aroma!

    Add finely chopped squash (use a food processor if you have one), coriander seeds & curry powder and cook for a further minute. Add the stock and about 1 cup of water. Stir well. Add the soup mix. Cook for about 30mins, until soup mix is soft, adding additional water by 1/2 cup as it becomes soaked into the lentils. 

    *Optional. Add physillium husk - this will thicken mixture immensely. It will also get your bowels moving. Great for your insides, but don't overdo it. You've been warned!
