Rainbow salad

Hi friends!

I have been making a conscious effort to be as organised as possible in the kitchen – having good food on hand and having everything prepped and ready to throw into a bowl.

This salad is delicious, I am gulping it down (mindfully chewing each mouthful) as we speak!

Ingredients:

  • Baby spinach
  • Red cabbage
  • Fennel
  • Spring onion
  • Coriander
  • Pulled jackfruit – recipe here
  • Strawberry
  • Left-over buckwheat pancake
  • Olive oil; salt & pepper to taste
  • Sesame seeds

Mix everything together and serve!

* I keep everything pre-chopped in the fridge in labelled containers! Makes it so much easier to prepare a healthy lunch, especially if you are busy 😉
